Cucumber Salad Recipe
Cool down in the summer heat with fresh pickled cucumbers! This past Memorial Day I had a cookout. My best friend, Kendra never had this cucumber, tomato and onion salad-she absolutely loved it;  and then the rest of the guests chimed in with compliments. The recipe is so easy, but I was still proud of my concoction! I listed a lot of cucumbers in the recipe, but you can use half of the cucumbers and ingredients if you are just making a snack or having a few people for dinner. Enjoy!



  • 9 cucumbers (about 2 1/2 pounds), scored and cut into 1/4-inch rounds
  • 1 red onion, halved and sliced
  • 1 tomato
  • 1 teaspoon salt
  • cinnamon
  • 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • Freshly ground pepper, to taste


  1. Peel and cut the cucumbers into 1/4 to 1/2 inch slices
  2. Dice tomato into bite sized chunks, removing seeds and pulp
  3. Slice the onion into 1/4 inch rings
  4. Place the onions, cucumbers, and tomato into a dish. Add salt, pepper, and a PINCH of cinnamon.
  5. Add vinegar first, toss. Add oil.
  6. Cover and leave in the refrigerator for at least 2 hours
